There are some recipes I share and some I don’t. There are a few that I share only with my best friends and those I can trust not to slaughter the recipe. We all know there are lots of cook wannabe’s who make a hash of your recipes and then tell everyone that it was “your recipe” as the reason their cooking sucks. As a lifelong baker, my reputation is important professionally so the recipes I share here are easy to whip up as long as you can read and follow steps 1, 2, 3 & 4. If it turns out badly, it’s you or stale ingredients, not the recipe! 😛 All these recipes have been tried and true. Bon Appitite.

POUTINE

Poutine – Delicious!!

Poutine is one of my all time favourites but there is no one that makes it better than the French Acadians here in New Brunswick. Here is the recipe.. hope you enjoy!

French Fries:

  • As many as you want and fry them crisp. That’s it.
  • Salt and Pepper, to taste

Poutine Gravy:

  • 3 Tbsp cornstarch dissolved in 2 Tbsp wate
  • 6 Tbsp unsalted butter, melted and add 1/4 cup unbleached all purpose flour stirring vigorously to make a roux (thick paste). Cook the roux on med-low until it smells slightly nutty but do not burn.
  • 20 oz beef broth – Add to the roux stirring vigorously to make a smooth thick gravy
  • 10 oz chicken broth – Add to the beef broth gravy stirring vigorously to make smooth. Cook until bubbly stirring constantly so it doesn’t scorch on the bottom. Lower heat to simmer and stir occassionally.
  • Salt and Pepper, to taste
  • Sprinkle cheese curds over hot fries then pour hot gravy over the curds to melt. That’s it. It’s delicious!

Raisin Bran Muffins:

Raisin Bran Muffins – Yummy!!
  • Combine All these “wet ingredients’ and beat together well
  • 1 cup Brown Sugar
  • 1 whole Egg, beaten
  • 1 cup Buttermilk
  • 6 Tbsp Butter, melted
  • 3 Tbsp Molasses
  • Combine All these “Dry ingredients’ and add to the Wet ingredients and beat together well
  • 1 1/2 cup Wheat Bran
  • 1 cup Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/2 tsp Salt

1 cup Raisins and / or / neither 3/4 cup chopped apples. Add Raisins, etc, and stir in. Fill muffin cups 3/4 full. Bake for 17-23 minutes at 375° F Note* If you don’t like raisins, son’t add them.
